- Dough:
- 1 cup . unsalted butter softened
- 1 cup . light brown sugar packed
- 2 . large eggs
- 1 tsp . vanilla extract
- 2 ¾ cups . all-purpose flour
- 1 tsp . baking soda
- ½ tsp . salt
- 1 ½ tsp . ground cinnamon
- 3 . Brown Sugar Cinnamon Pop-Tarts roughly chopped
- Glaze:
- 1 cup . powdered sugar
- 2 tbsp . milk
- ½ tsp . ground cinnamon
Step 1: In a large mixing bowl, cream together the softened butter and light brown sugar using a hand mixer until light and fluffy (2–3 minutes).
Step 2: Add in eggs and vanilla extract, mixing until well combined.
Step 3: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture into the wet ingredients, mixing on low just until combined.
Step 4: Gently fold in chopped Pop-Tart pieces with a spatula.
Step 5: Scoop dough into 2-tablespoon-sized balls and place on a parchment-lined baking sheet. Chill in the refrigerator for 30–45 minutes.
Step 6: Preheat oven to 350°F (175°C). Bake cookies for 10–12 minutes, or until edges are golden and centers are set.
Step 7: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Step 8: While cookies cool, whisk together glaze ingredients. Drizzle glaze over cooled cookies. Let set before serving.
