Ingredients
  

  • 2 cups of rotini pasta
  • 1 chicken breast grilled and diced
  • 4 strips of crispy bacon crumbled
  • 2 large hard-boiled eggs sliced
  • 1 avocado diced
  • 1 cup of cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup crumbled blue cheese
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta: Bring a large pot of salted water to a boil and cook the rotini pasta according to the package directions. Drain and rinse under cold water to cool.
  • Cook the chicken: Season the chicken breast with salt and pepper, then grill or cook it in a skillet until fully cooked (about 7 minutes per side). Once done, slice it into bite-sized pieces.
  • Cook the bacon: Cook the bacon in a skillet until crispy, then crumble it into small pieces.
  • Prepare the vegetables: Slice the hard-boiled eggs, halve the cherry tomatoes, dice the avocado, and thinly slice the red onion.
  • Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.
  • Assemble the salad: In a large mixing bowl, combine the pasta, chicken, bacon, eggs, tomatoes, avocado, red onion, and blue cheese. Pour the dressing over the salad and toss to combine.
  • Serve: Serve immediately or chill in the fridge for 30 minutes before serving.
