- 2 boneless skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup breadcrumbs panko or regular
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 large egg
- ½ cup vegetable oil for frying
- For the Creamy Potato Mash
- 4 large russet potatoes peeled and cubed
- 4 tbsp butter
- ½ cup heavy cream or milk
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp grated Parmesan cheese optional
- For the Garden Fresh Salad
- 2 cups mixed salad greens lettuce, spinach, arugula
- 1 cup cherry tomatoes halved
- ½ cucumber sliced
- ¼ red onion thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp honey
- Salt and pepper to taste
Prepare the Chicken
Marinate the chicken breasts in buttermilk for at least 15 minutes. In separate bowls, prepare the egg wash and coating mixture with flour, breadcrumbs, and seasonings. Coat the chicken with the egg and then dredge in the flour mixture.
Fry the Chicken
