- Olive Oil 2 tbsp
- Salt to taste
- Pepper to taste
- Coconut Milk 1 can, full-fat
- Fresh Lemon Juice 2 tbsp
- Lemon Zest 1 tsp
- Garlic 3 cloves, minced
- Fresh Herbs such as thyme or parsley, optional
Preheat the Oven to 375°F (190°C).
Prepare the Baking Dish: Grease the baking dish with olive oil or line with parchment paper.
Season the Cod Fillets: Brush the cod fillets with olive oil, then season with salt and pepper on both sides. Arrange the fillets in the prepared baking dish.
Make the Coconut Lemon Sauce: In a saucepan, combine coconut milk, garlic, lemon juice, and lemon zest. Simmer for 5–7 minutes until the sauce thickens slightly.
Pour the Sauce: Pour the coconut lemon cream sauce over the cod fillets.
Bake the Cod: Cover with aluminum foil and bake for 15–20 minutes until the fish flakes easily with a fork.
Broil for Finish (Optional): After baking, remove the foil and broil for 2–3 minutes to crisp the top of the sauce.
Garnish and Serve: Garnish with fresh parsley or dill, and serve immediately.
