Ingredients
  

  • 4 large green bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

Preheat the oven to 375°F (190°C). Cut the tops off the peppers and remove the seeds.

    Sauté onion and garlic: In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft (about 3-4 minutes).

      Brown the beef: Add ground beef to the pan, cooking until browned. Stir in diced tomatoes, cooked rice, oregano, paprika, salt, and pepper.

        Stuff the peppers: Fill the peppers with the beef mixture and place them in a baking dish.

          Top with cheese: Sprinkle shredded cheddar cheese on top and cover with foil. Bake for 30 minutes, then uncover and bake for another 15 minutes to melt the cheese and brown it slightly.

            Notes

            • Blanching the peppers before stuffing them can help them cook evenly and become more tender.
            • Feel free to mix in mozzarella cheese with cheddar for a creamier filling.
            • You can make this recipe ahead of time and refrigerate it until ready to bake.
