- 4 large green bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 cup shredded cheddar cheese plus extra for topping
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 can diced tomatoes 14.5 oz
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Preheat the oven to 375°F (190°C). Cut the tops off the peppers and remove the seeds.
Sauté onion and garlic: In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft (about 3-4 minutes).
Brown the beef: Add ground beef to the pan, cooking until browned. Stir in diced tomatoes, cooked rice, oregano, paprika, salt, and pepper.
Stuff the peppers: Fill the peppers with the beef mixture and place them in a baking dish.
Top with cheese: Sprinkle shredded cheddar cheese on top and cover with foil. Bake for 30 minutes, then uncover and bake for another 15 minutes to melt the cheese and brown it slightly.
