Instructions

  • Ingredients:
  • 4 cups fresh rhubarb, chopped into 1-inch pieces
  • 1 teaspoon ground ginger
  • 2–3 tablespoons finely chopped crystallized ginger
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground ginger (optional)
  • Pinch of salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 teaspoon vanilla extract (optional)

Notes

Equipment:

  • 9x9 inch baking dish
  • Mixing bowls
  • Wooden spoon
  • Pastry cutter (optional)
  • Measuring cups and spoons
  • Knife

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease a 9x9 inch baking dish.
  2. Prepare the rhubarb filling: In a mixing bowl, combine the chopped rhubarb, ground ginger, crystallized ginger, granulated sugar, and vanilla extract (optional). Stir until the rhubarb is evenly coated, then set aside for 10 minutes.
  3. Make the crumble topping: In a separate bowl, mix together the flour, rolled oats, brown sugar, ground ginger, and a pinch of salt. Add the cubed butter and rub it into the dry ingredients until the mixture becomes a crumbly texture.
  4. Assemble the crumble: Pour the rhubarb mixture into the prepared baking dish and spread it evenly. Sprinkle the crumble topping generously over the fruit, ensuring it’s evenly covered.
  5. Bake: Place the dish in the preheated oven and bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbling.
  6. Cool: Let the crumble cool for 15 minutes before serving. Enjoy with vanilla ice cream, custard, or heavy cream!
