Ingredients
  

  • For the Tart:
  • 1 sheet puff pastry thawed
  • 1 cup fresh morel mushrooms cleaned and sliced (or ½ cup dried morels, rehydrated)
  • 1 tablespoon olive oil or butter
  • 1 small shallot finely chopped
  • 1 garlic clove minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon fresh thyme leaves
  • ¼ cup dry white wine optional

  • ½ cup Gruyère cheese shredded
  • 1 tablespoon fresh chives chopped (for garnish)
  • 1 egg beaten (for egg wash, optional)

Instructions:

Step 1: Prep the Morels

  1. If using dried morels, soak them in warm water for 20–30 minutes, then drain and pat dry.
  2. For fresh morels, gently clean them with a damp cloth and slice them in half.

Step 2: Sauté the Aromatics

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add shallots and garlic, cooking until softened.

Step 3: Cook the Morels

  1. Add morel mushrooms to the skillet and sauté for 5–7 minutes.
  2. Season with salt, pepper, and thyme.
  3. Pour in white wine and let it reduce (optional).
  4. Remove from heat and let the mixture cool.

Step 4: Prepare the Puff Pastry

  1. Roll out the puff pastry on a baking sheet lined with parchment paper.
  2. Lightly score a 1-inch border around the edges without cutting through.
  3. Spread crème fraîche over the inner portion.

Step 5: Assemble the Tart

  1. Spoon the cooled morel mixture evenly over the pastry.
  2. Sprinkle Gruyère cheese on top.

Step 6: Bake the Tart

  1. Preheat the oven to 375°F (190°C).
  2. Brush the edges of the pastry with egg wash (if using).
  3. Bake for 20–25 minutes, until golden brown and crispy.

Step 7: Garnish & Serve

  1. Let the tart cool for 5–10 minutes.
  2. Sprinkle with fresh chives before serving.
