Ingredients
  

  • 4 cups seedless watermelon cubed
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest optional
  • 1/4 cup fresh mint leaves finely chopped
  • Pinch of sea salt

Instructions
 

  • Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  • In a small bowl, whisk together the honey, lime juice, and lime zest until well combined.
  • Drizzle the honey-lime dressing over the watermelon cubes.
  • Add the chopped mint leaves and a pinch of sea salt.
  • Gently toss everything together until evenly coated.
  • Serve immediately or chill in the fridge for 10–15 minutes before serving.

Notes

• Use only fresh mint for the best flavor—dried mint will not work.
• Feel free to add extras like cucumber, feta, or a sprinkle of Tajín for a flavor twist.
• Best enjoyed fresh, but can be stored in an airtight container for up to 24 hours in the fridge.
