  • 2 . cups . shredded cooked chicken . Preferably rotisserie or pre-cooked breast
  • 1 . cup . chopped spinach . Fresh or frozen
  • 1/2 . cup . chopped sun-dried tomatoes . Oil-packed drained
  • 1/2 . cup . sliced black olives . For briny flavor
  • 1 . cup . crumbled feta cheese . Adds a creamy salty tang
  • 1 . cup . shredded mozzarella . For meltiness
  • 1 . teaspoon . dried oregano . Mediterranean herb base
  • 1/2 . teaspoon . garlic powder
  • 1/2 . teaspoon . crushed red pepper flakes . Optional for spice
  • 1 . cup . Greek yogurt . For creaminess
  • 6 . whole wheat tortillas . Cut in halves
  • 1 . tablespoon . olive oil . For sautéing

  • 1/2 . cup . shredded mozzarella . Extra cheesy topping
  • 1/4 . cup . feta crumbles . Final tangy layer

Instructions
 

  • Step 1: Preheat oven to 375°F (190°C).
  • Step 2: In a skillet over medium heat, add olive oil, chopped spinach, and sun-dried tomatoes. Sauté for 3–4 minutes until softened.
  • Step 3: In a large mixing bowl, combine shredded chicken, cooked spinach mix, olives, oregano, garlic powder, red pepper flakes, Greek yogurt, and 1 cup feta. Mix until fully combined.
  • Step 4: Lightly grease a 9x13 inch baking dish. Lay halved tortillas to cover the bottom.
  • Step 5: Add a layer of the chicken mixture, then sprinkle mozzarella. Repeat layers until all ingredients are used, ending with tortillas on top.
  • Step 6: Sprinkle remaining mozzarella and feta over the top.
  • Step 7: Bake uncovered for 30 minutes or until golden and bubbly.
  • Step 8: Let it rest for 5 minutes before slicing and serving.

Notes

For added Mediterranean flair, garnish with chopped fresh parsley or a squeeze of lemon juice right before serving. This casserole is even better the next day!
