Ingredients

  • 8 large eggs
  • ½ cup milk (or heavy cream for a richer frittata)

Instructions

  1. Prepare the Pan: Preheat your oven to 400°F (200°C). Use a medium, oven-safe skillet, preferably cast iron. Add oil or butter and warm over medium heat.
  2. Cook the Fillings: Add any vegetables or meats to the pan. Sauté for about 5 minutes until soft, or heat pre-cooked ingredients until warm.
  3. Mix the Eggs and Dairy: In a mixing bowl, beat the eggs, milk (or cream), salt, and pepper until well blended.
  4. Combine and Cook: Pour the egg mixture over the fillings in the pan. Stir gently to evenly distribute the fillings. Cook over medium heat until the edges set (about 5 minutes).
  5. Bake in the Oven: Transfer the skillet to the oven and bake for 10 to 12 minutes, or until the center is firm and the top is golden.
