4 bone-in or boneless pork chops

2 large peaches, peeled and diced (or 1 cup canned peaches)

¼ cup honey or maple syrup

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

½ teaspoon red pepper flakes (optional)

Prepare the Pork Chops: Pat dry the pork chops and season them with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat. Sear pork chops for 4-5 minutes per side until golden brown. Remove and set aside.

Make the Peach Sauce: In the same skillet, sauté minced garlic until fragrant. Add diced peaches, honey, balsamic vinegar, Dijon mustard, and red pepper flakes (optional). Let it simmer for 5 minutes.

Combine: Add chicken broth to the peach mixture and simmer until the sauce thickens (about 3-4 minutes). Return the pork chops to the skillet, spoon sauce over them, and cook for another 5 minutes until the internal temperature reaches 145°F.
