Ingredients

  1. 6 slices of bread (white, whole wheat, or brioche)
  2. 4 large eggs
  3. ½ cup milk or cream
  4. 1 cup shredded cheese (cheddar, Swiss, or feta)
  5. ½ cup crumbled bacon (optional, or substitute with ham)
  6. ½ cup fresh spinach (or frozen)
  7. ½ cup sliced mushrooms (optional)
  8. Salt and pepper to taste
  9. Butter (for greasing muffin tin)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin with butter or non-stick spray.
  2. Prepare the bread: Flatten bread slices with a rolling pin. Use a biscuit cutter or glass to cut out circles and press them into the muffin tin to form a "cup."
  3. Toast the bread: Bake the bread cups in the oven for 8-10 minutes until golden and crispy.
  4. Prepare the egg filling: In a bowl, whisk together eggs, milk or cream, salt, and pepper. Add your choice of fillings (cheese, bacon, spinach, mushrooms).
  5. Assemble the cups: Spoon the egg mixture into the toasted bread cups, filling them nearly to the top.
  6. Bake the quiche cups: Bake for 15-20 minutes until eggs are set and lightly golden.
  7. Cool and serve: Let the cups cool slightly before removing them from the muffin tin. Serve warm!
