- 1/3 cup unsweetened cocoa powder
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon instant espresso powder
- 2 3/4 cups whole milk
- 4 ounces dark chocolate finely chopped
- 2 tablespoons butter
- 1 1/2 teaspoons vanilla extract
Combine dry ingredients: Whisk sugar, cocoa, cornstarch, salt, and espresso powder in a dry saucepan.
Add milk: Slowly whisk in the milk until completely smooth.
Cook: Cook over medium heat, whisking constantly, for about 8–10 minutes until thick and bubbling.
Boil: Once bubbling, continue cooking and whisking for 1 minute.
Add chocolate: Remove from heat. Stir in chopped chocolate, butter, and vanilla until smooth and glossy.
Strain and chill: Strain into serving cups or a bowl. Cover the surface directly with plastic wrap and refrigerate for at least 2 hours.
Use whole milk for the creamiest texture. Keep whisking while cooking to prevent lumps and scorching. The espresso powder enhances the chocolate flavor without making the pudding taste like coffee. Chill for at least 2 hours before serving.
