Low-Calorie Slow Cooker Recipes That Actually Fill You Up

Last winter I threw a chicken breast, some carrots, and a can of diced tomatoes into my Crock-Pot before I left for work. I forgot about it completely until 6pm. That five-minute dinner turned into one of the easiest weight loss habits I picked up all year.

If you’re trying to eat better but you’re exhausted by the time dinner rolls around, a slow cooker solves a real problem. You dump ingredients in once, walk away, and come home to something that’s actually ready. No standing over a stove after a long day. No takeout menus calling your name at 7pm.

Why Slow Cookers Work So Well for Weight Loss

A slow cooker forces you to plan ahead just a little, which usually means better ingredients end up in your meal. You’re not grabbing whatever’s fastest. You’re using lean proteins, vegetables, and broths that cook down into something filling without a ton of added calories.

It also keeps portion sizes honest. When you make a full pot of soup or stew, it’s easy to divide it into containers right away instead of eating straight from a pan.

How to Store These

Most of these recipes keep well in the fridge for 4 to 5 days in sealed containers. They also freeze nicely for up to 3 months, which makes them great for batch cooking on a Sunday. I usually portion mine into individual containers the same night I make them. Future me is always grateful.

The Recipes

1. Turkey and White Bean Chili (about 280 calories per serving)

This one’s a staple in my house. Ground turkey, white beans, diced tomatoes, and a mix of chili powder and cumin go into the pot together.

You’ll need: 1 lb ground turkey (browned first), 2 cans white beans, 1 can diced tomatoes, 1 diced onion, 2 cups chicken broth, chili powder, cumin, garlic.

  1. Brown the turkey in a skillet, then add it to the slow cooker.
  2. Add beans, tomatoes, onion, broth, and spices.
  3. Cook on low for 6 to 7 hours.
  4. Stir and serve with a squeeze of lime.

2. Honey Garlic Chicken (about 250 calories per serving)

Sweet, savory, and honestly kind of addictive. I make this one when I want something that feels like a treat but isn’t.

You’ll need: 4 chicken breasts, 1/4 cup honey, 1/4 cup low-sodium soy sauce, 3 cloves minced garlic, 1 tbsp rice vinegar.

  1. Whisk honey, soy sauce, garlic, and vinegar together.
  2. Pour over chicken breasts in the slow cooker.
  3. Cook on low for 5 to 6 hours.
  4. Shred the chicken and spoon the sauce over it before serving.

3. Vegetable Lentil Soup (about 190 calories per serving)

This is the one I make when I’ve been eating out too much and need a reset. It’s cheap, it’s filling, and it makes the whole kitchen smell incredible.

You’ll need: 1 cup dried lentils, 2 carrots, 2 celery stalks, 1 diced onion, 1 can diced tomatoes, 6 cups vegetable broth, thyme, bay leaf.

  1. Add everything to the slow cooker and stir.
  2. Cook on low for 7 to 8 hours.
  3. Remove the bay leaf before serving.

4. Salsa Chicken (about 220 calories per serving)

Three ingredients. That’s it. This is the recipe I hand to people who swear they can’t cook.

You’ll need: 4 chicken breasts, 1 jar salsa, 1 tsp cumin.

  1. Place chicken in the slow cooker and pour salsa over the top.
  2. Sprinkle with cumin.
  3. Cook on low for 6 hours, then shred with two forks.

5. Beef and Vegetable Stew (about 260 calories per serving)

Hearty without being heavy. I lean on lean stew beef here instead of the fattier cuts, and honestly you can’t tell the difference once it’s been cooking all day.

You’ll need: 1 lb lean stew beef, 2 potatoes (cubed small), 3 carrots, 1 onion, 4 cups beef broth, 2 tbsp tomato paste, thyme.

  1. Combine everything in the slow cooker.
  2. Cook on low for 7 to 8 hours, until the beef is tender.
  3. Season with salt and pepper before serving.

6. Buffalo Chicken (about 210 calories per serving)

This is for the spice lovers. I’ll admit I’m not always in the mood for buffalo anything, but this recipe changed my mind more than once.

You’ll need: 4 chicken breasts, 1/2 cup hot sauce, 1/4 cup chicken broth, 1 tbsp butter (optional).

  1. Place chicken in the slow cooker with hot sauce and broth.
  2. Cook on low for 6 hours.
  3. Shred the chicken and stir in the butter if using.

7. Moroccan-Spiced Chickpea Stew (about 230 calories per serving)

This one surprised me. I made it on a whim because I had a random can of chickpeas in the pantry, and it’s become a regular in the rotation since.

You’ll need: 2 cans chickpeas, 1 can diced tomatoes, 1 sweet potato (cubed), 1 onion, cinnamon, cumin, paprika, 3 cups vegetable broth.

  1. Add all ingredients to the slow cooker.
  2. Cook on low for 6 to 7 hours.
  3. Serve as is or over a small portion of rice.

A Couple of Notes

Don’t skip browning the meat first when a recipe calls for it. It only takes a few extra minutes and it makes a real difference in flavor. Also, resist the urge to lift the lid constantly. Every time you do, you let out heat and add cooking time.
