No-Bake Cottage Cheese Raspberry Cheesecake

Sharing is caring!

The first time I told my sister there was cottage cheese in her cheesecake, she put her fork down and gave me a look. She’d already eaten half her slice, and she went back for a second one anyway.

I’m Linda. I’ve been developing recipes here at Bees Recipes for over ten years, and this no-bake cottage cheese raspberry cheesecake has become my most-requested summer dessert. It’s silky, tangy, and full of bright berry flavor. It also has a lot more protein than a classic cheesecake, so it works if you want a healthy dessert recipe that doesn’t taste like a compromise.

It’s also easy. You blend the filling, swirl in a quick raspberry sauce, and the fridge does the rest. If you love baked versions too, my classic cottage cheese cheesecake recipe is the place to start.

Cottage cheese, cream cheese, graham cracker crumbs, fresh raspberries, heavy cream, lemon and gelatin arranged for a no-bake cheesecake

Essential Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs (about 12 full sheets)
  • 5 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • Pinch of salt

For the cheesecake filling:

  • 2 cups (16 oz) full-fat cottage cheese (4% milkfat)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup heavy whipping cream, cold
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 packet (2 ½ teaspoons) unflavored gelatin
  • 3 tablespoons cold water

For the raspberry sauce:

  • 2 cups fresh or frozen raspberries
  • 3 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Extra fresh raspberries for topping

Alternative Ingredients

Low on graham crackers? Crushed digestive biscuits, vanilla wafers, or Biscoff cookies all make a great base. For a gluten-free cheesecake, use gluten-free graham-style crackers or almond flour mixed with butter and a little maple syrup.

You can swap the powdered sugar for honey or maple syrup, about ⅓ cup. For a low-sugar dessert, a powdered monk fruit sweetener works well. I’ve tested it a few times and the texture holds up nicely.

Light cream cheese (Neufchâtel) will work, but full-fat gives the creamiest result. The same goes for the cottage cheese. Low-fat cottage cheese can turn a little watery. Strawberries, blackberries, or mixed berries all work in place of raspberries.

Step-by-Step Directions

1. Make the crust. In a bowl, stir together the graham cracker crumbs, sugar, salt, and melted butter until it looks like wet sand. Press it firmly into the bottom of a 9-inch springform pan. I use the bottom of a measuring cup to pack it tight. Chill it while you make everything else.

2. Cook the raspberry sauce. Add the raspberries, sugar, and lemon juice to a small saucepan over medium heat. Mash the berries as they soften, about 4 to 5 minutes. Stir in the cornstarch slurry and simmer for 1 more minute until thick and glossy. Strain out the seeds if you like (I usually do), then let it cool completely. For a deeper dive into berry sauces, the raspberry coulis guide from RecipeTin Eats is excellent.

3. Bloom the gelatin. Sprinkle the gelatin over 3 tablespoons of cold water and let it sit for 5 minutes. Then microwave it for 10 to 15 seconds until fully liquid. Don’t let it boil.

4. Blend the cottage cheese. This is the most important step. Put the cottage cheese in a high-speed blender or food processor and blend for a full 1 to 2 minutes until completely smooth, with no curds at all. I use my Vitamix, but a regular blender works if you scrape down the sides a few times.

5. Build the filling. Add the cream cheese, powdered sugar, lemon juice, zest, and vanilla to the blended cottage cheese. Blend again until silky. With the machine running, pour in the warm gelatin.

6. Whip the cream. In a separate bowl, whip the cold heavy cream to stiff peaks. Gently fold it into the cheesecake filling in two additions so the mixture stays light and airy.

7. Layer and swirl. Pour half the filling over the crust, then drizzle a few spoonfuls of raspberry sauce over it. Add the rest of the filling, dot more sauce on top, and drag a butter knife through it to make swirls. Don’t overmix, or you’ll lose that pretty marbled look.

8. Chill. Cover and refrigerate for at least 6 hours, ideally overnight. Top with fresh raspberries and any leftover sauce before slicing.

Pro Tips

Here’s a mistake I made for years: I didn’t blend the cottage cheese long enough. I’d pulse it for 20 seconds, decide it looked “fine,” and end up with a grainy cheesecake. Blend it longer than you think you need to. You’ll know it’s done when it looks like thick Greek yogurt.

Make sure your cream cheese is truly soft. Cold cream cheese leaves little lumps that no amount of blending will fix. Leave it on the counter for an hour first.

For super clean slices, dip a sharp knife in hot water and wipe it dry between every cut. And if you want a good tutorial on getting the crust just right, Tasting Table’s simple graham cracker crust covers it well.

FAQs

Can I taste the cottage cheese?
Honestly, no. Once it’s blended smooth and mixed with cream cheese, lemon, and vanilla, it tastes like a light, tangy classic cheesecake.

Can I make it without gelatin?
Yes, but the cheesecake will be softer. Add an extra 4 oz of cream cheese and chill it overnight. For a vegetarian version, agar agar powder works (use about 1 teaspoon, boiled with the water).

How long does it keep?
Up to 4 days in the fridge, covered. You can also freeze individual slices for up to 2 months, which makes it a nice meal prep dessert.

Can I use frozen raspberries?
Absolutely. Frozen berries actually make a great sauce, and they’re often cheaper in the off-season.

Why You’ll Love This Recipe

You don’t need an oven, a water bath, or any special baking skills. There’s no cracked top to worry about, and no wondering whether it’s set in the middle. It’s lighter than a traditional cheesecake but still rich enough to feel like a treat. And the raspberry swirl makes it look like it came from a bakery, even though it’s really one of the easiest desserts I make.

If no-bake desserts are your thing, you’ll probably love my no-bake blueberry cheesecake too.

What Makes This Recipe Unique

Most no-bake cheesecakes rely on lots of cream cheese and sweetened condensed milk. This one swaps half of that for cottage cheese, which adds protein and a clean, fresh tang that goes beautifully with tart raspberries. The small amount of gelatin keeps it light and sliceable, while the whipped cream gives it an airy, mousse-like texture. It’s a high-protein cheesecake that still feels like dessert.

  • About 8 grams of protein per slice

Conclusion

This no-bake cottage cheese raspberry cheesecake shows that a lighter dessert doesn’t have to be boring. It’s creamy, fruity, a little tangy, and easy enough for a weeknight while still looking impressive at a birthday or summer cookout. Blend that cottage cheese well, give it plenty of time in the fridge, and you’ll have a dessert people will ask you about.

If you make it, let me know in the comments how it turned out and which berries you used. I read every one, and I love hearing about your variations.

Happy no-baking,

Linda’s Notes

Smooth is everything: blend the cottage cheese longer than you think. It should look like thick Greek yogurt.

Soft cream cheese: leave it out for 1 hour so the filling stays lump-free.

Clean slices: dip your knife in hot water and wipe it dry between cuts.

Storage: keeps 4 days in the fridge, or freeze slices up to 2 months.
