Step-by-Step Directions

6. Toast the walnuts. While the veggies roast, toast the walnuts in a dry cast iron skillet over medium heat for 3 to 4 minutes, shaking the pan often. Pull them as soon as they smell nutty.

7. Make the dressing. Add the olive oil, balsamic vinegar, honey, Dijon, garlic, salt and pepper to a small mason jar. Seal and shake hard for 20 seconds.

8. Assemble. Spread the arugula on a large platter. Top with the warm sweet potatoes and beets, then scatter over feta, walnuts, herbs and pomegranate seeds. Drizzle with dressing just before serving.

Pro Tips

Here’s the mistake I made for years: I piled all the veggies onto one crowded baking sheet. They steamed instead of roasting, came out soft and pale, and the beets bled all over the sweet potatoes. Two pans, a single layer, and space between the pieces. That’s the whole secret to crispy edges.
